Fish-Hater Fridays- Black Bean Burritos

While I am not a fish-hater like Chick B, I don’t really like preparing and cooking fish at home.  The whole experience just smells a little too “fishy” for me!  So, if you are like me and prefer fish to be an “out to dinner” menu option, here is another great alternative to try on Fridays during Lent!

Chick A

Black Bean Burritos

Ingredients:

Vegetable cooking spray

1 cup finely chopped green onions

2 teaspoons minced garlic

2 15 oz cans no salt added black beans, drained

1 14 oz can no salt added whole tomatoes, undrained and chopped

1 ½ inch thick slice lemon

1 tablespoon chili powder

1 teaspoon cumin

24 large fresh spinach leaves, washed and trimmed

8 eight inch flour tortillas

1 ½ crumbled feta cheese

Toppings:

Shredded spinach, onion, tomatoes, cheese

Coat large nonstick skillet with cooking spray; place over medium heat until hot.  Add green onion and garlic, saute until tender.

Add black beans and next four ingredients; stir well.  Bring to a boil; reduce heat and simmer uncovered until liquid evaporates, stirring frequently.  Remove and discard lemon slice.  Mash beans slightly with a potato masher or wooden spoon.

Arrange 3 spinach leaves down each tortilla.  Spoon bean mixture evenly down center of tortillas; sprinkle evenly with cheese.  Roll up tortillas and place rolls, seam side down in a 13 x 9 x 2 inch baking dish coated with cooking spray.

Cover and bake at 350 degrees for 20 minutes or until thoroughly heated.  Top with desired toppings.
