Even though the South is still experiencing some cold weather, spring really is just around the corner. And that means tomatoes are back in season! Here is a great recipe for Fish-Hater Fridays or any spring meal. Enjoy!

Tomato Pie
1 pie crust
5 to 7 medium tomatoes (washed and sliced)
1 ½ cups shredded mozzarella cheese
1 cup cheddar cheese
¼ to ½ cup mayonnaise (I use Hellman’s)
½ teaspoon dried oregano
salt and pepper to taste
lemon pepper to taste
fresh basil
Slice tomatoes and pat dry with paper towel to remove as much water as possible. Let tomatoes sit out to dry while preparing the mixture. Prepare the crust according to package instructions. Set aside ¼ cup of cheddar cheese. Mix remainder of ingredients (except ¼ cup cheddar and basil) together. Place tomatoes in pie crust, top with mixture. Sprinkle with set aside cheddar cheese and chopped basil. Bake at 350 for 30 minutes.
